Ricotta crostini with baby basil leaves


For the light Monday breakfast I suggest you preparing those superb simple ricotta crostini. It will take only few minutes to grill your bread (brush the slices with some extra virgin olive oil and grill until golden) and crush the ricotta until smooth. I always add some soft goat cheese to give the flavor and some cucumber if I need to make my crostini lighter.




Serves: 4 - 6
Preparing time: 10 minutes


Ingredients:
  • 1 baguette (cut in slices)
  • 2 cups ricotta cheese
  • 2 tablespoons goat cheese
  • 1 teaspoon lemon juice
  • salt, freshly ground pepper, olive oil, fresh basil leaves 
  • some cucumber, peeled, cut into small pieces (optional)
    1. Heat your grill pan and grill your bread slices for few minutes per side.
    2. In the meanwhile, combine ricotta, goat cheese, lemon juice, few tablespoons of olive oil and mix very well until smooth. 
    3. Add cucumber if you are adding it and season with salt and freshly ground pepper.
    4. Spread the cheese mixture over your grilled bread and serve.
