No bake cheesecake


I have always wanted to make a cake that doesn‘t need any baking. For me, the most interesting part in such recipes is the crust: have you ever thought that biscuit crumbs and butter can make such a perfect base for the cake? For making it even more delicious, I decided to take chocolate biscuits and I can say it was really worth it..

This cake is much lighter than a regular cheesecake but it still melts in your mouth and before you could think, you will definitely be trying to reach for the next bite. 



Serves: makes about 20 cm cheesecake
Preparing time: 20 minutes + 3 hours of chilling


Ingredients:

  • 5 tablespoons butter, melted
  • 1.5 cup chocolate biscuit crumbs
  • 20 grams unflavored gelatin
  • 100 ml cold water
  • 500 grams mascarpone or other cream cheese
  • 200 ml heavy whipping cream
  • 150 grams sugar
  • 30 grams black chocolate


  1. Mix your melted butter with biscuit crumbs for the crust. You should get a thick, crumbly paste. 
  2. Take your 20 cm baking tray and pat the chocolate crust on its greased bottom.
  3. Chill in refrigerator while preparing the filling.
  4. In the meanwhile, take a small saucepan and mix gelatin with 1/4 cup water.
  5. Wait for 5 minutes until your gelatin crystals bloomed out.
  6. Heat and stir just until your gelatin is dissolved and remove from heat. Leave to cool down.
  7. Take a large bowl and beat whipping cream with sugar until fluffy.
  8. Gradually beat in mascarpone and mix everything well.
  9. Add cooled gelatin and mix thoroughly for one minute.
  10. Now spread your filling over the chilled chocolate biscuit top and chill for at least 3 hours.
