When the cold season starts, I always find that my scales show two kilos more. Of course, I know that it’s normal because we start eating more comfort food which definitely has much more fat and calories. Even doctors claim that we can’t avoid weight gain in autumn because of our metabolism which tends to slow down! (still can‘t believe that..)
Sometimes this weight gain is OK for me. However, in most of the cases I simply can’t stand when my jeans become so tight on me! For making them look perfect again, I prepare the whole pot of pumpkin soup and eat only it for my dinner for about five days. Even after three days of eating it, I start noticing that my digestion becomes much faster (according to doctors, pumpkin gives such effect) and even my skin starts to glow. So, you can also try this delicious, having only about 130 calories per serving (of course, without the garnish), soup if you have the same problem with your jeans.

Preparing time: 30 minutes
Ingredients:
- 1 medium pumpkin, peeled, cut into cubes
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, chopped
- 3 cups chicken broth
- Pinch cayenne pepper (optional)
- ¼ teaspoon nutmeg
- ¼ teaspoon coriander seeds, crushed
- Salt, freshly ground pepper
- Take a large pot and heat the olive oil in it.
- Add your garlic with coriander seeds, cayenne and nutmeg and cook until golden. Don’t let your spices burn, so do this for only 30 seconds!
- Add your pumpkin cubes and sauté for another 5 minutes to give them some flavor.
- Pour in chicken broth and boil for 20 minutes until your pumpkin becomes smooth.
- Mash or use a food processor or blender to make your pumpkin puree smooth.
- Now taste your soup: add salt and freshly ground pepper if needed.
For the garnish, you can use pumpkin seeds, grated Parmesan, arugula with some boiled shrimp or croutons. Of course, it is not recommended adding the garnish if it’s your pumpkin diet time.
