Light dinner: Chanterelle mushroom spaghetthi



For me (I hope I am not the only one!), it’s really hard to do something after the break. Even it’s a short one, the first time back on track means haaard hours spent in my life, no matter if we talk about working out, skin care routine or blogging. However, now, after almost 6 months period (???), I am writing the post again! Yay!

As the summer is on its high point, I can’t stop thinking about all the seasonal goods that can be easily found in every farmer’s market. Lots of various fruits, vegetables, berries and mushrooms…Today my catch was beautiful chanterelles. As the famous Jamie Oliver advices, I cleaned my chanterelle mushrooms by using a dry method (just by brushing all the dirt from them) in order to avoid a sponge effect. In addition, I used simple ingredients for bringing out their flavor and made this light pasta dish:




Serves: 2

Preparing time: 15 minutes

Ingredients:

  • 200 grams spaghetti (you can use linguine, tagliatelle or other your favorite pasta)
  • 3 handfuls chanterelle mushrooms (cleaned)
  • 3 slices of smoked port ham or bacon, cut into small pieces
  • 2 cloves garlic, finely chopped
  • 1 small onion, chopped
  • 3/4 cup dry white wine
  • a bunch of parsley and tarragon leaves, chopped
  • Salt and pepper to taste 
  • 2 tablespoons of olive oil
  • parmesan cheese (optional)

  1. Cook the pasta according to instructions given on your packet. 
  2. In the meantime, take a large prying pan and heat two tablespoons of olive oil in it.
  3. When your oil is hot, add the pork ham, chopped onion and garlic and cook these ingredients until golden.
  4. Add the mushrooms and cook over a medium heat for 2- 3 minutes.
  5. Pour in the wine and cook untill almost all your wine and water which came from chanterelles has evaporated.
  6. Season with salt and black pepper according to your taste.
  7. Add the cooked pasta into the pan and toss over for a moment to allow your pasta soak up some of the sauce.
Serve with a little of grated parmesan cheese and chopped tarragon and parsley leaves.
